Of course, there is surfing, golf, SCUBA diving, horseback riding, you name it. But all the things you pay for are pretty well covered in the advertising you can pick up anywhere.  I'd recommend getting a copy of This Week Kauai and 101 Things to Do on Kauai at the Airport or Wal-Mart when you first arrive for a good list of activities to choose from.

Golf

With lots of golf courses to choose from and great weather, golf is very popular among residents and visitors alike.

Boat Tours of the Na Pali Coast

Boat tours are great on Kauai.  It is really the only way to see one of the most beautiful spots in the world unless you want to make a 4 day hike.  50' cats make 4 hour, 6 hour, and all day tours of the Na Pali coast.  Some people recommend, Holo Holo since their boats run on french fry oil instead of diesel fuel and smell a whole lot better to ride on.  But a lot of people go on Capt. Andy's and love it too. The longer tours include snorkeling.  Do expect rougher seas in the winter.

SCUBA diving

I like SCUBA and recommend Dive Kauai although the best diving is a two-hour-there and three-hour-back boat ride to Niihau across the channel.  Or take the boat dives that are only 10 minutes off shore for shallow diving in nice reefs with lots of small fish and almost always big turtles.
